Hi Amie! I so look forward to your posts showing up in my in box. They always make me feel like I'm in a dream watching a story play out. This week you've inspired me to make the maple syrup pie as mini pies for my older neighbors. They'll enjoy the sweet treat! Happy Valentine's Day!

Love the photo!

I look forward to trying both pies. The Quebec sugar pie reminds me a little of sugar cream pie -- a Hoosier tradition.

Your mother's story of first breathless, wordless love is stirring--weren't we all there once? A perfect Valentine's Day story, and the sweetie pie (s) sound so simple, you wonder if they'd work--but I know they would. I can't decide which one to make... Happy Valentine's Day, Amie!💕

P.S.: That photo of you and your mom is precious!

Oh I haven’t had a sugar pie since I was a kid. I’ll definitely try these. I worked in a pie shop and learned quite a bit about homemade pies. I alwaysenjiy adding to my pie recipes at home

Do you make your crusts from scratch? This is a skill I need to work on...

I do!! Pie shop taught me after grandma did.

2 c flour

1 c butter flavored Crisco

Pinch salt

Cut with pastry cutter until all pea sized crumbs

With Wooden Spoon add about 1 c of cold water, I start w half cup and add more. (Sometimes need a touch more, maybe another 1/2 c)

Only add enough till flour is incorporated into it and dough is in a big single ball.

Secret is not to overwork it. I sparingly stir until water incorporated

Then cover hall in bottom of bowl with Saran Wrap so almost no air touches it and refrigerate for couple hours.

Pie shop used a food processor and just pulsed it lightly until incorporated.

Good luck!! They taught me cream pies, fruit pies and meringues and homemade whip creams. Pasties of beef or chicken or vege too.

It’s a wealth of knowledge I’m glad I spent a year helping them while my son was in school.

Good stuff, here! That crust sounds like the one my mom swore by, and I had no success with. Maybe I overworked it...
