Nothing like real maple syrup. My aunt and uncle used to tap their trees in the Catskills. Thanks for making me remember that.

Awesome post, Amie! I remember as a child enjoying the chapter about tapping maples and boiling syrup in one of my favourite books, 'Little House in the Big Woods'.

Maybe it's because I'm British that I've never quite got on board with the idea of combining bacon with maple syrup, but my American sister-in-law is a total fan! The morning after Christmas one year I remember her having the last of the brandy butter (which was offered alongside the traditional Christmas pudding as part of our festive feast) with her breakfast bacon - apparently it was delicious!

Skip the diner and run to the kitchen! This recipe is super easy and I’ll bet your diner friends don’t use that secret ingredient: cheese.

Amie, thank you for sharing your love for maple syrup and all the recipes. I love that I live in Maple Nation. :) Maple Syrup (the REAL thing) is always in my house. I bake with it instead of using sugar and love it on waffles or pancakes. When I had up towards Maine I will make sure to look for Northwoods Nectar.
