What's on my holiday table? After reading the recipe for Tamale Casserole, I'm making that for the family Christmas Eve Supper and I might leave any leftovers out for St Nick, too! Happy Holidaze, Amy!
I have found the Impossible Ground "Beef" sold in a block in the freezer section to have the best consistency and taste. I've used it in a number of casseroles.
This is wonderful! Our Christmas Eve tradition from my parents is a creamed codfish over mashed potatoes. Salted cod soaked with onions in a cream sauce. With gobs of butter and some fresh roasted carrots such a comfort and fond memories. Sort of an Irish blessing
I think you need to pitch your story to Hallmark. I have never watched a Hallmark Christmas movie, but I would watch that one! Thank you for joining the bake-along and for the kind mention. Speaking of holiday addictions, I am a GBBO addict and am now rewatching old seasons with Mary Berry. Just watched an episode where the contestants made Swedish princess cake and am now dying to make one. However, this year's Christmas dessert will once again by Diane Morgan's eggnog cheesecake (from her book The Christmas Table), which I already promised my son I would make. Have a wonderful holiday xx
Oddly enough, I had coffee recently with a woman who has produced a number of Hallmark Christmas movies. I had a ton of questions about the whole formulaic concept and production, and she initially thought I was there to pitch a script! Not sure why I’m so fascinated by these movies; hopefully I’ll keep chipping away at my story once the holidays are over. And maybe I’ll switch the channel over to GBBO!
The Christmas pictures of you with your parents are really special, Amie! The tamale casserole sounds like something I might pull off—tamales, probably not! Thanks for this lovely glimpse of the holidays in Arizona! I’m definitely up for a Hallmark film escape!
I love this photo you shared of you and your parents. Beautiful. I haven't been watching many Hallmark movies...sigh...but Christmas Vacation is always a must with Clark Griswold. HA! It makes me laugh every time.
Thank you so much Amie for sharing your wonderful recipes. Wishing you and yours light and laughter this holiday season. xxx Keep writing. :)

Ooooh, I’m happy to hear that! Please let me know what you think!
Made it last night, Amie. Delicious!
That’s awesome, Kate! Glad you enjoyed it.
I will! I've never used a ground beef substitute and may try it as well.

Great! Thanks for the hint.
Love the picture with your parents.❤️ Also, Hallmark movies are the greatest!
Also, the overlay is genius!
Right??
This all sounds wonderful. Also love the photos as others have said. Merry Christmas, Amie!

Definitely comfort food with an Irish twist, Tim. Thanks so much for sharing this family tradition.

What was your gingerbread house entry??
Ha! We were merely spectators!
Now I'm hungry. I'm particularly intrigued by the princess cake and Sharon's elaborate Christmas menu. I am feeling like such a slacker!
I checked out a recipe for princess cake…it made my “maybe” list.
