I always wondered what the Irish ate before the potato was introduced! And I didn't realize that potatoes were once so integral to Maine's economy. Interesting. Plus I love that you did research in an old encyclopedia.

They had a rich a varied diet and then rich landlords and English government passed the enclosures acts and the peasants were kicked off the best land.

I love Colcannon and often have it in a pie shell, mashed potatoes on top with cheddar cheese. Yum. I'm getting hungry now... Thanks for a mouthwatering post!!

Lol!! Fyi in my colcannon pie version the cabbage is not, repeat not, boiled!! But it's okay, you don't have to eat it - just pass your plate over to me...😁
